Web exclusive: Toffee Strawberries

 
What is Christmas without strawberries? Children, especially, will adore these. Leave the calyxes on; apart from the fact they look attractive, cut surfaces on fruit tend to make toffee “melt”. For the same reason, thoroughly dry the berries after washing them.
 
  • 1 cup sugar
  • ˝ cup water
  • 2 teaspoons rosewater
  • 12 large strawberries
  • 12 satay sticks

 

Place sugar in a small saucepan and pour over water. Simmer without stirring over medium heat until golden. Meanwhile, insert a skewer into each strawberry. When the caramel turns a deep golden colour, remove from heat and dip each strawberry in, swirling to coat. Place on baking paper to set. Makes 12
