Tart apples and quince paste are the perfect partners for rich, creamy gorgonzola, a flavoursome blue vein cheese. These individual pies make a great starter for a winter meal.

- 2 granny smith apples
- 2 sheets frozen flaky puff pastry
- 2 tablespoons quince paste
- 100g gorgonzola
- Sprigs of fresh thyme

Preheat oven to 180°C. Peel, quarter and core apples. Partly thaw pastry and cut 2 x 10cm diameter circles from each sheet.
Warm quince paste and spread a small amount over each circle. Thinly slice each apple quarter and arrange half an apple on each pastry round, leaving a 1.5cm rim.
Using your fingers, pinch and roll the pastry edge to create a crust. Crumble gorgonzola over and bake 10-15 minutes until pastry is puffed and golden. Serve garnished with thyme. Serves 4
