Spencer Park Fudge

This easy biscuit-based slice is named after Spencer Park in Christchurch where reader Denise Carter, who supplied the recipe, first came across it years ago. Walnuts and dried fruits are nice additions.

2 packets wine biscuits, crushed
4 weet-bix, crushed
1 cup desiccated coconut
1 can sweetened condensed milk
250g butter
2-3 dessertspoons cocoa
1 teaspoon vanilla essence

Combine biscuits, weet-bix and coconut in a bowl. Melt together condensed milk, butter and cocoa. Add to dry mixture with vanilla and mix well. Press into a large slice tray and place in fridge to cool. Ice with chocolate icing.
