Avocado Fritters

Lovely served with crispy bacon, some creme fraiche or sour cream and a light salad.
 
For every avocado you need 30g of self-raising flour, 1 egg and salt. 1 avocado will make about 4 fritters.

AvocadoHeat oven to 180°C. Peel avocado and place in a food processor with flour, egg and salt to taste. Pulse just to mix. You don’t want a smooth mix – it’s nice to see some chunks of avocado. If you don’t have a food processor you can use a stick blender or just mash with a fork.
Heat some oil in an ovenproof frying pan – just enough to cover the bottom. Put spoonfuls in pan and cook for about 2-3 minutes on each side. They cook fairly quickly. Put pan in oven and bake for about 8 minutes.
 
For crispy bacon I find Beehive streaky rashers give a good result. Lay a sheet of baking paper in a tray, lay bacon on paper and place in oven about the same time as you put the fritters in. You can of course lay some prosciutto between layers of baking paper and cook it for about the same time and you get a lovely crunchy result.
