Below are the recipes for plates served by the Hornby Inner Wheel Club at the recent Christchurch House Tour. Many thanks to the club for a delightful afternoon tea.
Shortcakes These are really quick to make, have a lovely shortbread-like texture and can be topped with numerous sweet fillings for a delicious afternoon tea treat.

175g flour

150g butter, softened

75g icing sugar
Preheat oven to 150°C. Place ingredients in a food processor and mix to a dough. Roll into walnut-size balls and press into small patty tins. Bake until lightly coloured, 15-20 minutes.
Cool for a few minutes before removing from tins. When completely cooled fill with lemon curd, caramel, stewed apple or whatever takes your fancy, and top with whipped cream.

Pinwheel Sandwiches Work with 2 slices of bread at a time, crusts removed. Place them on the bench in an oblong with the ends slightly overlapping and press together to join.
Filling: Mix a punnet of spreadable cream cheese with 2-3 chopped gherkins and some chopped red onion (this can be done in a food processor; just pulse together). Spread mixture over bread. Place whole gherkins across one edge of bread (cut lengthways if too fat) and roll up.
Slice pinwheel into 4.
Gherkin and mashed egg is also good as a filling. For a sweet option, mix cream cheese with chopped dried apricots, place sliced mandarins across the bottom, sprinkle with chocolate chips and ginger pieces and roll up.
