
Artisan honey producers J. Friend and Co has recently released three seasonal varieties of gorgeous pure honeycomb ($17.95 per 340g). Like wine, each one has unique characteristics: Medbury, North Canterbury, honeycomb is dense, chewy and butterscotchy – a good match for nutty cheese such as gruyère or an aged gouda; Waihaorunga, South Canterbury, honeycomb is delicate and citrusy – a perfect partner for tangy salty cheeses such as feta and goats milk cheese or stronger varieties such as parmesan or pecorino; West Coast’s Karamea Bluffs honeycomb is woody and earthy with hints of spice – excellent with creamy yoghurt or served with yoghurt cheese (labneh) and toasted walnuts.
